What is Squab?  It is better known as a young pigeon.  It is considered to be a delicacy that was loved by Kings, Emperors, Pharaohs, and Medieval Royalty. 

Squab was often called the “meat of kings.”  That is an interesting term considering what type of bird it comes from.  I would have thought that young pigeon meat would be considered the complete opposite. 

Squab is still considered to be a delicacy today.  It can be found in high end restaurants across the country.  A company in California prides itself in growing premium Squib for restaurants.  If you have not tried it before you might want to check it out.
